Bon appetit...

I made these for Super Bowl Sunday and meant to post the recipe then because they're sooooo good - and sooooo easy. They freeze real well and are ever so nice to have on hand for those times when you want a quick appetizer or a little something different to nibble on. I have several variations, but this is the recipe I used:


Crabbies

8 ounces crabmeat, well-drained and free of shells
1 (5 oz) jar Kraft Old English Cheddar spread
2 T mayonnaise
1 tsp garlic powder
1/2 cup butter (1 stick), softened
1/2 tsp dried parsley
Dash or two hot sauce or cayenne pepper
6-8 English muffins

In a medium bowl, combine softened butter and cheese spread. Stir in remaining ingredients. Spread on split muffins. Cut each muffin half into 8 wedges.* Place on cookie sheet and broil until bubbly and lightly browned, about 10 mins.


*The topping is a little loose at first, so I put them on a cookie sheet in the freezer for about 1/2 hour until firm enough to cut more easily. For freezing, just store wedges in a Ziploc bag.

Tip: I think these would be good using chopped tiny cocktail shrimp instead of crabmeat too.

We've gotten the QVC crab cakes too - usually the combo deal w/ salmon and tuna steaks - yummy!
